Egmont Honey, Strawberry & Chia Jam

This quick strawberry chia jam recipe uses honey as a healthier alternative to refined sugar, and is equally delicious on hot buttery toast as it is served with muesli or porridge.   

 

Serves: Makes 1 jar 

Prep Time: 5 minutes 

Cook Time: 10 minutes 

 

INGREDIENTS  

  • 500g strawberries, hulled, quartered 
  • ¼ cup water 
  • 1 vanilla pod, halved lengthways 
  • 2 tablespoons Egmont Honey 
  • 2 tablespoons chia seeds 

 

METHOD 

  1. Put the strawberries, honey, water and vanilla bean into a heavy-bottomed saucepan, bring to the boil then reduce the heat and simmer for 10 minutes (or until the liquid has evaporated and the fruit has started to break down).  
  2. Remove from the heat then stir in the chia seeds and spoon into a sterilised jar.  
  3. Store in the fridge and use within a week.
