Egmont Honey, Strawberry & Chia Jam
This quick strawberry chia jam recipe uses honey as a healthier alternative to refined sugar, and is equally delicious on hot buttery toast as it is served with muesli or porridge.
Serves: Makes 1 jar

Cook Time: 10 minutes
INGREDIENTS
- 500g strawberries, hulled, quartered
- ¼ cup water
- 1 vanilla pod, halved lengthways
- 2 tablespoons Egmont Honey
- 2 tablespoons chia seeds
METHOD
- Put the strawberries, honey, water and vanilla bean into a heavy-bottomed saucepan, bring to the boil then reduce the heat and simmer for 10 minutes (or until the liquid has evaporated and the fruit has started to break down).
- Remove from the heat then stir in the chia seeds and spoon into a sterilised jar.
- Store in the fridge and use within a week.
