Egmont Honey Vanilla Extract
This honey vanilla makes a wonderful Christmas gift and just gets better with age. It is used like regular vanilla extract and is also delicious in cocktails!
Serves: Makes 1 cup

INGREDIENTS
- 250ml/1 cup vodka
- 3-4 vanilla pods, split lengthways
- 1 tablespoon Egmont Honey
METHOD
- Put the vodka into a clean bottle then add in the vanilla pods, halving if required.
- Add in the honey then shake the bottle so that it dissolves.
- Leave for 6-8 weeks in a dark place (agitating the bottle every-so-often) before using.
- The longer you leave it the more intense and flavourful it becomes.
