Egmont Honey & Ginger Biscuits

Egmont Honey & Ginger Biscuits

These biscuits make the most wonderful Easter gift. Perfect for those who don’t eat chocolate or for the honey afficionados in your life. Using honey in the place of sugar gives these biscuits not only a lovely floral flavour but also a delicious chewiness which combines wonderfully with the ground almonds.

 

Serves: Makes approximately 20 biscuits

Prep Time: 5 minutes

Cook Time: 12 minutes

 

INGREDIENTS

  • 115g butter
  • 135g Egmont Honey
  • 50g almonds
  • 100g flour
  • 1 tablespoon ginger
  • 1 teaspoon baking powder

 

METHOD

  1. Pre-heat the oven to 180°C and line a baking tray with baking paper.
  2. Put the butter and honey into a large bowl and beat until light and fluffy.
  3. Put the almonds and flour into a small food processor (we used the food processing attachment that our stick blender plugs into) and grind the almonds until fine.
  4. Add this to the honey mixture along with the ginger and baking powder and mix well to combine.
  5. Roll into small balls and arrange on the baking tray, then press slightly to flatten.
  6. Bake for 12 minutes or until golden brown.
  7. Remove from the oven and set aside to cool before storing in an airtight container.
