Salmon Salad with Egmont Honey Dijon Dressing

We love this Salmon salad that has the perfect mix of flavours and nutrients.  Dressed in Egmont Honey Dijon this really makes it extra tasty and something you will want to make again either for a weeknight dinner or lunch.

Prep time: 10 minutes

Cook time: 15 minutes



- 275 g salmon fillets 

- 100 g salad mix

- ½ cucumber sliced

- ½ avocado diced

- 50 g cherry tomatoes halved

- ¼ red onion thinly sliced



-1 tbsp olive oil

- 1 tbsp lemon juice

- 1/2 tbsp Egmont Honey

- 1/2 tbsp djion mustard



1. Heat a frying pan over a medium-high heat, season the salmon with a little salt and pepper. Add a film of oil to the pan and cook the salmon skin side down for 2-3 minutes before turning and cooking the other side for a further 2 minutes. Remove the salmon from the heat and allow to cool slightly before flaking into bite sized pieces with a fork.

2. In a small bowl, whisk together olive oil, lemon juice, honey, Djion mustard, salt and pepper to make the dressing.

3.In a large salad bowl, toss together the mixed salad leaves, cucumber, avocado, cherry tomatoes, and red onion.

4. Drizzle the honey Dijon dressing over the salad and gently toss until everything is evenly coated. Serve immediately.
