Lime & ZIngy Hot Honey Cashews
These lime and Zingy Hot Honey cashews are incredibly moreish and will possibly disappear quicker than it took you to make them! Great as lunchbox snacks.
Serves: Makes 2 cups
Prep Time: 15 minutes
Cook Time: 10 minutes
INGREDIENTS
- 2 cups cashew nuts
- Zest + juice 2 limes (approx 2 tablespoons juice)
- 1 teaspoon sea salt
- 1-2 tablespoons Egmont Honey's Zingy Hot Honey
METHOD
- In a heavy-bottomed frying pan over a medium-high heat toast the cashew nuts until golden brown and crunchy. If they start to brown too quickly then turn the heat down a little.
- Turn off the element (but leave the pan where it is) and pour over the lime juice and stir until the juice has evaporated.
- Next scatter over the lime zest and sea salt then drizzle over Egmont Honey's Zingy Hot Honey then mix well again.
- Remove from the element and either continue to stir the nuts from time-to-time to stop them from sticking together. Or scatter over a piece of baking paper and leave them to cool that way.
- Once cool store in an airtight container.
