Fire Cider

This wonderful elixir combines fiery chilli and ginger with turmeric, citrus and herbs, all steeped for weeks in apple cider vinegar. Best taken daily over the winter months to strengthen the immune system and ward off cold-weather bugs.

Serves: Makes approx. 500ml

Prep Time: 25 minutes

Cook Time:

INGREDIENTS

  • 1 large sprig rosemary with leaves removed from stalk
  • 2 tablespoons oregano leaves
  • 3 kawakawa leaves, roughly torn
  • 1 lemon, halved, thinly sliced
  • 1 orange, halved, thinly sliced
  • 1 small onion, finely chopped
  • 10 garlic cloves, minced
  • 2 chillies, thinly sliced
  • 1 large thumb-sized piece turmeric, thinly sliced
  • 1 cup thinly sliced ginger, lightly packed
  • 2 cups apple cider vinegar
  • ¼ cup Egmont Honey

METHOD

  1. Put all the ingredients aside from the apple cider vinegar and honey into a very clean jar.
  2. Press down fairly firmly then pour the apple cider vinegar over to cover all the ingredients.
  3. Seal then leave in a cool dark place for 4-6 weeks.
  4. Strain the solids from the liquid then stir in the honey.
  5. Add more to taste if desired, then bottle into a very clean bottle and store in the fridge.
