Citrus Salad
This lovely salad adds a burst of colour, flavour and vitamin C in the depths on winter when you need it most.

INGREDIENTS
- 6 oranges
- 6 grapefruit
- 2 or 3 mandarins
- Honey
- Mint
METHOD
- Peel the skins from the oranges, grapefruit and mandarins using a sharp knife. Make sure that most of the pith is removed as this is bitter.
- Slice thinly then arrange on a large plate or platter. We also thinly sliced a rangpur lime with its skin on to add flavour and interest. You could do this with a regular lime.
- Drizzle over some honey and scatter with a handful of limes leaves.
- Delicious served as is or with coconut yoghurt, ice cream or regular yoghurt or on top of muesli.
