Citrus Salad

This lovely salad adds a burst of colour, flavour and vitamin C in the depths on winter when you need it most.

 Serves: 4-6

Prep Time: 20 minutes

 INGREDIENTS

  • 6 oranges
  • 6 grapefruit
  • 2 or 3 mandarins
  • Honey
  • Mint

 

 METHOD

  1. Peel the skins from the oranges, grapefruit and mandarins using a sharp knife. Make sure that most of the pith is removed as this is bitter.
  2. Slice thinly then arrange on a large plate or platter. We also thinly sliced a rangpur lime with its skin on to add flavour and interest. You could do this with a regular lime.
  3. Drizzle over some honey and scatter with a handful of limes leaves.
  4. Delicious served as is or with coconut yoghurt, ice cream or regular yoghurt or on top of muesli.
