Egmont Honey & Strawberry Lemonade Popsicles
Serves: Makes 6

Cook Time: 5 minutes
INGREDIENTS
- 500g strawberries, hulled, quartered
- ¼ cup lemon juice
- ½ cup water
- 1/3 cup Egmont Honey
METHOD
1. Put the strawberries, lemon juice and water into a heavy-bottomed pot.
2. Bring to the boil then cover, reduce the heat and simmer for 3 minutes.
3. Remove from the heat and stir in the honey.
4. Sit a sieve over a large heat-proof jug and strain the strawberry pulp from the juice.
5. Cool then pour into ice-block moulds and freeze overnight.
6. Save the strawberry pulp to serve on top of muesli or yoghurt or in a fruit crumble.
