Egmont Honey Roasted Peaches
Make the most of in-season peaches by combining Egmont Honey, vanilla and lemon and roasting them until they begin to soften. Delicious served with some vanilla bean ice cream.

INGREDIENTS
- 6 ripe peaches, halved, stones removed
- 1 ½ teaspoons vanilla extract
- Zest 1 lemon, plus a squeeze of juice
- Egmont Honey to drizzle
- Ice-cream, marscapone or yoghurt to serve
METHOD
1. Pre-heat the oven to 180°C.
2. Arrange the peaches cut-side up in an oven proof dish.
3. Pour the vanilla over the peaches, scatter over the lemon zest then squeeze over the juice of half the lemon.
4. Drizzle generously with honey, cover with tinfoil and roast for 25 minutes.
5. Remove the tinfoil and roast for a further 20 minutes or until the peaches are soft.
6. Remove from the oven and serve with a good dollop of marscapone or a scoop of vanilla bean ice cream!
