Egmont Honey Banana Bark
This recipe is a goodie. Using pantry staples it layers sweet ripe bananas with salty, creamy peanut butter all topped with dark chocolate and frozen until it forms a very moorish bark. A word of warning, you won’t be able to stop at just one piece!
Serves: Makes roughly 15 pieces
Prep Time: 20 minutes
INGREDIENTS
- 2 ripe bananas
- ½ cup peanut butter
- 2 tablespoons honey
- 250g dark chocolate (we used 72% cocoa)
METHOD
1. Slice the bananas and arrange them on a baking tray lined with baking paper.
2. Using the bottom of a glass gently press down on the banana slices to mush them together a little.
3. Put in the freezer to harden.
4. Mix together the peanut butter and the honey then spread this mixture evenly over the frozen banana layer.
5. Return to the freezer.
6. Melt the chocolate in a metal bowl set over a saucepan of water. Make sure the bowl doesn’t touch the surface of the water and heat gently until the chocolate has completely melted, stirring as you go.
7. Pour the chocolate over the peanut butter layer, sprinkle with sea salt if desired then return to the freezer to fully harden. Depending on the temperature of the room you are in this could take up to 3 hours. Or you can leave overnight.
8. Once hard, remove from the freezer, break into pieces and either serve immediately or layer between strips of baking paper, put into a ziplock bag and freeze.
