2 x Flatbread – 1 per person
1 x pack Halloumi - 3-4 slices halloumi per person
1 x tablespoon Egmont Honey
2 x table spoons Hummus of your choice
1 x Sprinkle Chilli flakes
Half a lemon squeezed
1 x bag Rocket or spinach
10 x Cherry tomatoes sliced – 5 per person
Bunch Coriander chopped
1 x sliced capsicum
Preheat oven to 180 C.
In a small bowl, add honey, squeeze of lemon, chilli flakes, salt and pepper and stir to combine.
The, slice halloumi into 3-4 slices per person and place into bowl. Marinate for 10 mins.
Heat your pan to medium-high heat with a little olive oil.
Add the halloumi and capsicum to fry and then pour the remaining marinade. Fry the halloumi 2-3 mins on each side until golden brown, while the capsicum softens slightly.
Next, add the flatbread to the oven to warm.
Remove Flatbread from oven and top with hummus of your choice.
Stack rocket, halloumi, capsicum, cherry tomatoes and pour any remaining sauce from pan over the flatbread.
Finish with a bunch of chopped coriander and a sprinkle of salt and pepper. (Add extra honey for extra sweetness)
