Egmont Honey, Pistachio & Chilli Lamb Racks
These lamb racks are mouth-wateringly good! The honey and chilli pair beautifully and the pistachio nuts add a lovely crunch.

INGREDIENTS
- ¼ cup breadcrumbs
- ¼ finely chopped pistachio nuts
- 2 tablespoons finely grated parmesan cheese
- 1 tablespoon thyme leaves
- 1 teaspoon sea salt
- ½ teaspoon chilli flakes
- 2 tablespoons olive oil + extra for searing the lamb
- 1 tablespoon Egmont Honey
- 1 rack of lamb
METHOD
1. Pre-heat the oven to 220°C. Put the breadcrumbs, nuts, cheese, thyme, salt and chilli into a bowl and mix well to combine.
2. Put the olive oil and the honey into a small saucepan and heat until the honey is runny. Pour this mixture into the breadcrumbs and mix again until combined.
3. Heat a tablespoon or so of olive oil in a heavy-bottomed frying pan (that can go into the oven) over a medium-high heat and once hot, sear the lamb racks on all sides until browned.
4. Press the breadcrumb mixture onto the top of the lamb racks then place the whole pan (put in a small oven dish if your frying pan can’t go into the oven) into the oven and roast for 20 minutes (for medium-rare) or cooked to your liking.
5. If the crumb starts to brown too much then loosely cover the racks with tin foil for the remainder of the cooking time.
6. Remove from the oven and cover loosely with tin foil (if you haven’t already) and leave to rest for 5 minutes or so, then slice and serve.
