Egmont Honey Nut Bars
We love these nut bars. They are packed with flavour, texture and good fats and make a great snack or breakfast on the go and are wonderful lunchbox fillers.
Serves: Makes approx. 16 pieces

INGREDIENTS
- 2 cups cashew nuts
- ¾ cup almonds
- ¼ cup sesame seeds
- ½ coconut chips
- ¼ cup hemp seeds
- ¾ cup cranberries
- Zest 1 orange
- ½ cup Egmont Honey
- 2 tablespoons coconut oil
- 2 teaspoons vanilla essence
METHOD
1. Pre-heat the oven to 180°C and line a slice tin with baking paper.
2. Whiz up or finely chop 1 ¼ cups of the cashews and all the almonds.
3. Put the chopped cashews, almonds, the whole cashews, sesame seeds and the coconut chips into an oven-proof dish and toast in the oven until a light golden brown.
4. Remove from the oven and put into a large bowl along with the hemp seeds, cranberries, the orange zest and a pinch of salt. Mix well to combine.
5. Put the honey and the coconut oil into a small heavy-bottomed saucepan, bring to the boil then reduce the heat and simmer for 4 minutes.
6. Remove from the heat, stir in the vanilla and pour the honey mixture over the nuts and mix well.
7. Tip into the lined slice tin and, using the back of a spoon, press the mixture out into the tin, compacting it firmly as you go.
8. Put into the oven and cook for 20-25 minutes or until golden brown.
9. Remove from the oven and leave to cool completely before cutting into squares. Store in an airtight container.
