Anzac Biscuits

We have put a Egmont honey twist on the humble Anzac biscuit and added in cinnamon and mixed spiced to boot! We know we’ve broken the rules but we think you’ll love them.  

Serves: Makes approx. 24 biscuits 

Prep Time: 20 minutes 

Cook Time: 12-15 minutes 

 

INGREDIENTS  

  • 100g butter 

  • 1 teaspoon baking soda 

  • 1 cup flour 

  • 1 cup oats 

  • 1 cup shredded or desiccated coconut 

  • 1 teaspoons cinnamon 

  • ½ teaspoon mixed spice 

  • 250g Egmont honey 

METHOD 

  1. Pre-heat the oven to 180°C and line two baking trays with baking paper.  

  1. Put the butter into a pot, gently melt then mix in the baking soda. It will froth up.  

  1. Put the flour, oats, coconut and spices (if using) into a bowl.  

  1. Pour over the butter and the Egmont honey and mix well.  

  1. Roll into balls, arrange on the trays and flatten out using clean hands then bake for 12 minutes or so or until golden brown and crunchy.  

  1. Turn the trays halfway through baking to ensure they bake evenly.  

  1. Remove from the oven and let cool on a cooling rack before storing in a large glass jar.  

 

These keep for weeks. Though we suspect they won’t last that long!
