Ginger & Dark Chocolate Biscuits
These biscuits are flavoured with lots of fresh ginger and dotted with delicious dark chocolate. Wonderful lunch-box treats or great for a shared morning tea.
Serves: Makes approx. 30 biscuits

Cook Time: 12-15 minutes
INGREDIENTS
- 175g butter, cubed, softened
- 2/3 cup honey
- 2 teaspoons vanilla extract
- 3 teaspoons grated ginger
- 1 egg
- 2 ½ cups flour
- 2 teaspoons baking powder
- 150g dark chocolate, roughly chopped
METHOD
Pre-heat the oven to 180°C and line two trays with baking paper. Put the butter, honey, vanilla and ginger into a food processor and process until light and fluffy. Add in the egg and process again. Tip mixture out into a bowl and add in the flour, baking powder and the dark chocolate. Mix until just combined then roll into balls, arrange on the baking trays and press lightly to squash a little. Bake for 12-15 minutes or until golden brown and cooked through. Remove from the oven and leave to cool before storing in an airtight jar.
