Hot Cross Bun French Toast

Here at Egmont Honey we love French toast and given that Easter is just around the corner, we’re using hot cross buns! We’ve topped them with our deliciously decadent dulce de leche and vanilla bean ice-cream.

 

 

Serves: 6

Prep Time: 10 minutes

Cook Time: 15 minutes

 

INGREDIENTS

-1 x packet hot cross buns (6 buns)

-2 eggs

-½ cup cream

-½ cup milk

-1 teaspoon vanilla extract

-Dulce de Leche

-Vanilla bean ice cream

-Chopped chocolate to garnish

 

METHOD

  1. Slice the hot cross buns in half, set aside.
  2. Break the eggs into a shallow dish then pour in the cream, milk and the vanilla extract. Whisk together until smooth then arrange the hot cross buns (you may have to do this in batches) in this mixture, flipping them over so that both sides soak up the mixture.
  3. Heat a heavy-bottomed frying pan and add in a good knob of butter. Once melted add in the hot cross buns and fry on both sides until golden brown.
  4. Repeat with remaining hot cross buns, keeping them warm in a warm oven as you go.
  5. To serve, arrange two hot cross bun halves on a plate, spread with Dulce de Leche, top with a scoop of vanilla bean ice cream then scatter with some chopped chocolate and serve immediately.
