Feijoa & Apple Crumble

Who doesn’t love a good crumble? Ours is made using our delicious honey and takes the classic apple crumble to whole new heights with the addition of in-season feijoas (use chopped pear if feijoa is not available in your neck of the woods) and a crunchy almond and ginger-spiked topping. Serve with ice cream or yoghurt and enjoy!

 

Serves: 6-8

Prep Time: 15 minutes

Cook Time: 40-45 minutes

 

INGREDIENTS

  • 5 cups chopped feijoa
  • 3 cups chopped apple
  • 6 tablespoons Egmont Honey
  • 2 teaspoons vanilla extract
  • ¾ cup flour
  • ¾ cup oats
  • ¾ cup almonds
  • 1 teaspoon ground ginger
  • 100g butter

 

METHOD

  1. Pre-heat the oven to 180° Put the fruit into a baking dish and drizzle over 3 tablespoons of the honey and the vanilla and mix well to combine.
  2. Then, using the back of a spoon, smooth the fruit out so that it is more-or-less flat.
  3. Put the flour, oats, almonds and ginger into a food process and process until it resembles coarse breadcrumbs. Add in the remaining honey and the butter and process again until combined.
  4. Spoon the crumble mixture over the fruit and then bake for 40-45 minutes or until the fruit is cooked through and bubbling around the edges and the top is golden brown. You may find you need to put a piece of tinfoil over the crumble if it starts to brown too much.
  5. Remove from the oven and serve with yoghurt, cream or ice cream.
