Chia Berry Pudding

These chia berry puddings are not only delicious, but also packed with omega-3 fatty acids, protein (add a scoop of protein powder for an extra hit!) and fibre and sweetened with our silky-sweet honey.

 

Serves: 2-4

Prep Time: 10 minutes

Cook Time: 5 minutes

 

INGREDIENTS

  • 4 tablespoons chia seeds
  • 1 cup milk
  • 1 ½ teaspoons freshly grated ginger
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract or paste
  • 1 tablespoon + 2 teaspoons Egmont Honey, plus extra to serve
  • ½ cup Greek yoghurt
  • 2 cups frozen berries, any kind is good
  • Seeds and nuts to serve

 

METHOD

  1. Put the chia seeds into a small bowl and pour over the milk. Using a fork, whisk to prevent the seeds from sticking together.
  2. Put the bowl into a plastic bag or cover with cling film and refrigerate for an hour or two or until set. You will know it is set when it is thick and jelly-like.
  3. Remove from the fridge and stir in the ginger, cinnamon, vanilla and 1 tablespoon of the honey. Set aside.
  4. Put the berries into a heavy-bottomed saucepan, put on the lid and over a medium-high heat defrost and heat through the berries. Stir in the honey then set aside.
  5. To serve, layer the berries and chia pudding then top with chopped seeds and nuts and a drizzle of honey if desired.
