Chia Berry Pudding
These chia berry puddings are not only delicious, but also packed with omega-3 fatty acids, protein (add a scoop of protein powder for an extra hit!) and fibre and sweetened with our silky-sweet honey.

INGREDIENTS
- 4 tablespoons chia seeds
- 1 cup milk
- 1 ½ teaspoons freshly grated ginger
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract or paste
- 1 tablespoon + 2 teaspoons Egmont Honey, plus extra to serve
- ½ cup Greek yoghurt
- 2 cups frozen berries, any kind is good
- Seeds and nuts to serve
METHOD
- Put the chia seeds into a small bowl and pour over the milk. Using a fork, whisk to prevent the seeds from sticking together.
- Put the bowl into a plastic bag or cover with cling film and refrigerate for an hour or two or until set. You will know it is set when it is thick and jelly-like.
- Remove from the fridge and stir in the ginger, cinnamon, vanilla and 1 tablespoon of the honey. Set aside.
- Put the berries into a heavy-bottomed saucepan, put on the lid and over a medium-high heat defrost and heat through the berries. Stir in the honey then set aside.
- To serve, layer the berries and chia pudding then top with chopped seeds and nuts and a drizzle of honey if desired.
