Egmont Honey - Lime, Pineapple & Honey Mocktail

This drink is summer in a glass. Add a shot of vodka and it becomes a quick and easy, yet deliciously refreshing cocktail. The lime syrup can be stored in the fridge for a week or so and is wonderful drizzled over a freshly baked lemon cake or blueberry muffins or made into tea along with a slice or two of fresh ginger.  



  • Zest of 2 large limes
  • ½ cup Egmont Honey
  • ¼ cup hot water
  • ¼ cup lime juice
  • Ice to serve
  • Lime wedges to serve
  • Pineapple juice
  • Soda water



Put the lime zest, honey, hot water and lime juice in a small heat-proof bowl and stir well until the honey has melted and the syrup is smooth. Pour into a sterile jar or bottle and leave to infuse overnight.

When ready to serve the drink put ice into glasses, add a wedge of lime, pour over 4 tablespoons of the lime and honey syrup and then top with equal measures of pineapple juice and soda water.
